One trick with deer is they don’t like to feel ‘enclosed’. They can jump over quite high fences, but they won’t jump over a much lower one into an area that is also fenced.
So what often helps is a sort of ‘double fence’ in areas you want to protect. Two fences about 4-6’ apart.

I believe the reputation of being 'too hot' is actually only about new seedlings. I don't think fresh chicken poo burns anything that has established itself. I have never had an issue putting it fresh around plants - but for seedlings I would only use it well aged.
Some of the farms around me sell it by the bucket (bring your own bucket). I don't know if they rot it down first or not. I use mine straight from the run onto the plants and it seems to work fine.

I don't know enough to advise. All I can say is I worried about my chickens the first July 4th but they were completely unconcerned. My cats do not like fireworks or thunder but the chickens seem not to care about either. They are also no put off by leaf blowers or mechanical diggers.
