Then store in the freezer, because raw and dehydrated doesn't mean free of bacterial contamination. Cooking them first would be safer, if possible. Better yet, just freeze them without dehydrating. Space concerns in the freezer?

Yes freezers are used for farm raised meats and frozen veg and fruits. And of course DH ice cream!
I wouldn't eat them raw but cooked or in baking like a raw egg . They're are lots of YT on this method.
